2 Vegan Dinners

I have so much gratitude for you all! I am so happy to hear so many of you are loving the dinners, or feeling inspired to have a healthier lifestyle!! It has changed mine SO MUCH!!

My dinner last night was a barley salad and it was SOO dang good.

This is one of simplest, yet most delicious meals you can make!

What you'll need:

- 1 cup of dry Barley , cooked and cooled

- We had left over quinoa that we added ( this is optional)

- 1/2 can black beans ( These are great protein)

- 1/2 cartoon of cherry Tomatoes cut in half

- 2 cooked Corn on the cob, cut from the cob

- 2 Avocado's diced

- Greek olive's ( This is optional)

- Gardein meatless meat

- Cilantro roughly chopped

DRESSING - 1 lemon, zested and squeezed

- 1 table spoon Dijon mustard

- 1/4 cup olive oil

- Tablespoon of chopped cilantro

- Teaspoon of chopped parsley

- Salt and pepper for taste

Add all ingredients into a mason jar and shake well.

Once barley is cooked and cooled add in all ingredients, including dressing, toss, refrigerate for 30 minutes or longer so all ingredients can marry, enjoy!!!

Tonight's dinner was so quick and easy

What you'll need:

- 1 cup white or brown rice

- 1 bell pepper

- handful of spinach

- 1 handful of kale

- 2 chopped carrots

- 1 link of plant based sausage


- bring one cup of water to a boil. Once boiling turn off burner and add in one cup of rice.

- In a separate pan add one tablespoon of avocado oil and add in you spinach and kale until it's sautéed. Add in the rest of your vegetables. I love mine to be a little more raw, so I do not cook my vegetables that long.

I am a lover of soy sauce, so to make it a little healthier I add amino acid's and BAMMMM so delicious!! You are done!!
