I seriously have never had such a quick, loving, thrilled response to a blog post. Being vegan as well as becoming more educated on animal cruelty is something I have grown so passionate about and am thrilled to share with you guys. <3 If you are wanting to learn more, there's lots of documentaries on Netflix as well as just the response of your body!
I love cooking and even more so lately through all the trail and errors ( cauliflower wings) I have learned so much about myself, as well as a new hobby!
Tonight I had a pretty simple meal.
something I love about a plant based lifestyle is that you really are open to anything. Add any veggie's and seasonings you'd like!
I used :
1 sweet potato
1 large carrot
some brussel spouts
I chopped all my veggies and tossed them in a large bowl with your choice of oil ( I used olive oil) and all purpose seasoning. (even eating these raw is DELIC!) After this I just threw them in the air fryer; however, if you do not have an air fryer, throw them in the oven at 375 and cook until crispy!
I then heated up my plant based italian sausage on the stove as well as some couscous and bam! You have your dinner!
I love salsa on my couscous, totally your preference through!
Now for the part we are all here for, the ice cream!!!
Seriously the EASIEST recipe to follow.
freeze some chopped banana, I suggest 3-4
I let mine freeze for 2 days, really only cause I forgot, I am sure 24 hours would be fine, let them sit out to thaw out until the outsides start to mush. Add to a blender or food processor until completely mixed. This process takes longer than you would expect, I let mine run 3 times. After it was a creamy texture I added finely chopped dark chocolate pieces and mixed that for a few seconds. There you have it! Vegan Ice cream, 'nice cream' they say, haha!
