Sunday night + Pumpkin Bread

Happy Sunday, friends!!! I am so excited for all the fall baking! In my household we make all the pumpkin goodies! Pumpkin bread, roll, pie, you name it! My mom was actually just saying she wants to make pumpkin torte for thanksgiving!! 

My dad and I are big pumpkin fans! (except he doesn't like PSL, weirdo!!) ;) 

 

I spent today being as productive as I can. Having two jobs now, I do not quite have the flexibility to just hang out and get things done when I feel like it!! I watched Hunters game this morning then finished some blog posts wrote, meal prepping done ( peek at tomorrows posts!) Photos shot, and some Pumpkin bread made!! I would say It was a very successful day! 

 

How do you spend your Sundays? I know so many of my friends spend the day running around, going shopping, but I LOVE having at least sometime on my Sunday to just prepare for the week! 

 

Pumpkin bread recipe:

 

- 1 1/4 cup canned pumpkin 

- 1/3 cup water

- 2 large eggs

- 1/2 cup oil

- 1 1/2 cups sugar

- 1/2 teaspoon nutmeg 

- 2 teaspoon cinnamon 

- 3/4 teaspoon salt 

- 1 teaspoon baking soda 

- 1 3/4 cup flour 

(The recipe I followed used walnuts, I did not use this in my recipe but if you would like to use it in yours, it called for half a cup) 

 

Instructions: 

- Preheat oven to 350 degrees. Grease your bread pan and start by mixing in your pumpkin, water, eggs, oil, and sugar. 

- Once these are fully mixed in add the rest of the ingredients gradually. 

- Once all the ingredients are fully mixed in, pour the batter into the pan and let cook for 65-70 minutes on the lowest rack in your oven!
