Chicken Tortilla Soup

Soup has been my favorite food ever since I was a young girl. ( I know, old soul at heart.) If I had to choose two soups to eat forever, it would be this chicken tortilla soup, and the zuppa Toscana soup! SO YUMMY!!

Living with an overwhelming about of boys, soup doesn't happen too often in my household! I would make it for lunch and then just have the left overs the following days!

Weather you are looking for a good cozy dinner, or some pre-made luches for the week! This is my favorite go to!

Your Ingredients:

1 15.25 oz can of undrained corn

1 15 oz can of undrained black beans

1 10 oz can of Rotel tomatoes , undrained

1 Cream Cheese packet ( I know, not for the dairy lovers out there!)

1packet of ranch seasoning

2 chicken breasts ( you can also substitute for 2 cans of chicken

1 tsp. Chili Powder

1 Tsp. onion powder

The way you choose to your chicken will depend of how you make this. I have made this both ways and the both taste the same! Delicious!!

If you the CAN of chicken, you will throw all the ingredients, undrained and all, into the pot on your stove, as the pot heats up, the Cream Cheese will melt. I put the lid on top and let sit for 20 minutes stirring throughout the process.

If you do regular chicken breasts from the packets, I put this in the pressure cooker. The way you add them in there is crucial! Always add the chicken first, at the very bottom of the cooker, then add your canned goods. Beans, Corn, Tomatoes.. On the very top add your cream cheese and then sprinkle the Ranch packet on top of it all! Set your pressure cooker to soup and wala!! With my pressure cooker, I sometimes have to do two rounds. I do notice this way takes longer only cause the chicken is uncooked! Either way is still delicious!

Serve with some cilantro, chips, and top with Avocado! That easy! You have my favorite chicken Tortilla Soup!!
